Easy as Apple Pie

PIE. The three letter word that seems to make all the bad things in this world go away. A slice of pie can function as the cure-all for anything. (Sorry diabetics, unfortunately you're exempt.) Americana. Wholesomeness. Marie Callender's. Vaginas. Whatever connotations this popular dessert has in your mind, you cannot deny that it certainly has a place in your heart.

Pie & I truly have had an interesting relationship. I first met him at a party. He was lemon-yellow on the inside, with peaks of slightly browned hair. He might have had jaundice. But he was delightful nonetheless. As time passed, we couldn't resolve our differences (He never called. . . and always somehow disappeared), so I moved on to his friends -- cherry, pecan, and pumpkin.

Pumpkin. Now there was an upstanding gentlepie. He was spicy, but just smooth enough to be subtle. His graham cracker crust was the perfect amount of sweetness to balance out the creaminess of his center. But I was getting bored. (I make the best pumpkin pie) And he only came around once a year, plus my friends disliked him.

So I went to my first love: Apple Pie. He came in a box, sold by McDonald's. He was $1. He was my mother's favorite. Everyone knows that if mama approves, Tiffany approves.
It had been long since I tried my hand at pie. The last I made was pecan, but I suppose after I found out about French tarts (and how AMAZING they are), they were always preferred over plain 'ol humble pies.

Well the time has come. Pie, we shall reunite, you & I.
Disregard the surplus of apples that I really needed to finish off -- I really want to give you another chance, and I'm glad you chose to give me one too -- because we go so well together :)

Ever since I watched Snow White as a little girl, I was mesmerized by how she made the pie in the "Someday My Prince Will Come" sequence. So I was giddy when I got to do this!

As a side note, Snow White was freaky looking.

I made homemade vanilla ice cream to go with it :)
Vanilla beans are expensive, rawr.
