Gluten-Free Birthday

*WHEW*

What was that? Oh, just the sound of my breath. After a week of absolute CHAOS, I think I can breathe again -- but only enough so that I can dive deeper. It's not over yet, though I'm so. damn. close. Apart from overwhelming myself as a direct outcome of procrastination and sleeping too late for my own good (a result of productive measures such as browsing Tastespotting.com & retail websites...), the Lord sent me a lovely gift last weekend: a birthday girl!

Anna cozied into the west coast for a couple of days coincidentally on the gloomy and rainy weekend of her birthday, and it was so nice to have her back - despite the fact that our schedules collided at times, but it's okay. She'll be back. . . (RIGHT?!) Everything seemed like old times again! Of course I couldn't give up the opportunity of baking a celebratory cake for the newlytwenty-two. It's always fun baking gluten-free because it's that much more gratifying when you can find a recipe that, A. works, and B. tastes good. Not okay, but good.

What I made tasted good.

It tasted like a chocolate baby climbed into your mouth and exploded.
Or something like that.

Chocolate flourless cake with chocolate cheesecake, chocolate mousse, and chocolate ganache. I concocted something similar to The Cheesecake Factory's Godiva cheesecake using about a pound and a half of Trader Joe's 70% Dark Chocolate, one-dozen eggs, and 16 ounces of cream cheese.













This cake was so fun to make, but I only really made it so that Anna would come visit me more. Hee. I hope it worked.
