Tarte au citron

"Quand la vie vous donne des citrons, fait des tartes au citron"

I honestly think I only recently came around to enjoying lemon desserts and pastries. There's no good reason as to why it took me this long except maybe I really don't like the word, "curd" -- and I often associate lemons with "lemon curd." Anyway, I know it doesn't make sense, but there it is. This weekend, Christine and I decided to finally hang out after a 50 year hiatus, because she's a busy working woman now, and busy working women don't have time to do silly things like bake and talk about frivolities. We decided to make something "Easter-y" in honor of the special weekend and lemon tarts came to mind. Had I not fumbled by using salted butter in lieu of unsalted butter, this would have been a perfect endeavor, however, I presume the Lord was trying to direct my attention to my own sloth and lack of attention to detail. . . and ta-da! An over-salted tart. Ah well, there's always next time, hopefully. Hopefully busy paralegal lady has time for me again soon...
